A Four-Course Italian Dinner, Built for the Season
The spring menu is a prix fixe experience, meaning a set multi-course meal at a fixed price. It is available nightly from 5:00 PM. Guests choose one dish per course from a curated seasonal selection. The menu is priced at $44 per person, with an optional sommelier-led wine pairing for $39.

Starters and Antipasti
The opening courses set the pace. The Hiro Lake wagyu polpette pairs premium beef meatballs with san marzano tomato and burrata cream. The dungeness crab bisque with lemon crème fraiche goes a different direction, lighter and more delicate. Both are strong ways to begin.
Handmade Pastas and Mains
Quattro’s handmade pasta is what built its reputation. The tagliatelle bolognese, braised for eight hours, and the fusilli tartufati with wild mushrooms, truffle cream, and pecorino romano DOP are both guest favourites. The chicken al limone on parmesan risotto offers a fresh alternative, and upgrades are available for those drawn to Ocean Wise wild halibut or the 12oz grilled veal chop.
Dessert
The budino al cioccolato finishes things on an indulgent note with caramelized brown butter chantilly and brownie bits. The panna cotta limoncello with citrus gel and marcona almond brittle takes a lighter, more refreshing approach. Different moods, equally satisfying.
Fine Dining in Whistler with a Wine Pairing
For an additional $39, a sommelier pairs each course with a selected wine. Quattro holds a Wine Spectator award for its list, so this is not a generic add-on. It is a curated experience designed to complement the food.
The Paré Dining Passport
Quattro is part of the Paré Restaurant Group alongside Caramba and Lorette Brasserie. This spring, all three restaurants launched a Paré Dining Passport. Order an entree at each restaurant between May 15 and June 30 to collect stamps and qualify for a $700 prize package, including dinner for two and a one-night stay at the Hilton Whistler Resort and Spa.
